My girlfriends and I met again last month to spend an evening cooking, drinking and laughing all together over Mexican food. We started off with some homemade guacamole and salsa, and broke out the shaker from some delicious variations of the classic margarita. While we are all familiar with burritos, chimichurris, or enchiladas, for our main course we strayed from the familiar and made Chiles En Nogada (Stuffed Chiles in Walnut Sauce) with Nopales (Cactus Salad).  (Our recipes came complimentary from our friend's mother.)  While the prep work involved a lot of chopping and sauteing, it was a lot quicker with 6 pairs of hands.  The Chiles came out so delicious, with the sweet and savory pork filling was sweet and savory, topped with the neutralizing sauce (which we used pecans instead of walnuts).  The cactus salad was so light and refreshing, it was a surprisingly simple to toss together.  Afterwards, we attempted to make churros from scratch, which if you're tossing them into flaming hot oil, I recommend to turn off the smoke alarm!
